What's for Dinner? Stuffed Pork Loin

Finally my very own recipe!  No cookbooks, no internet help, just mine, mine, mine!!!!

Ok really it's Steve's BUT, he's mine soooooo it counts!!

Yes, I forgot to take a picture of it plated.  Sometimes it just slips my mind.  Sorry.

Yield: 9 servings    Prep/cook time: 2 hours

Ingredients:
  • 3 lb Boneless pork tenderloin
  • 1 package Stovetop stuffing - cornbread
  • Peach jam
Directions:
  1. Prepare cornbread stuffing per box instructions.
  2. Cut slit length of pork loin leaving 1 inch on each end and the depth should be 1/2 of loin. 
  3. Stuff loin with 1/2 of cornbread mixture, top with peach jam. 
  4. Tie loin with butchers string.
  5. Place in 9 x 13 pan on rack & cover with aluminum foil.
  6. Place in preheated oven at 400 degrees (F) for 1.5 hrs or until internal temperature reaches 160 degrees (F).
Again I've failed at taking pictures while Steve was in action.  But the end result was so yummy.  I entered this recipe into livestrong to get the nutrition information.

Absolutely will be making this dish again.
